Karisma Kapoor's coffee

Coffee’s influence isn’t just limited to beverages. Coffee is also an important ingredient in various desserts, snacks and treats. Coffee chocolate truffles, coffee cake cookies and coffee desserts are also very popular with coffee aficionados. The best treat to pair with your cup of coffee though, is inarguably a coffee cake, as seen in Karisma Kapoor’s story. Coffee cakes are sponge cakes that are flavoured with coffee. Most coffee cakes have a soft and tender crumb with notes of vanilla and coffee. Here’s an easy recipe of a coffee cake, that you could try out at home :

Coffee cake:

For the coffee sponge

  1. Two and a half tablespoons of baking powder
  2. Two hundred and twenty grams of brown sugar
  3. Four medium eggs
  4. Two hundred grams of butter at room temperature
  5. Two tablespoons of milk
  6. Three tablespoons of instant coffee powder - or coffee granules ground to a powder
  7. salt
  8. Two hundred grams of plain flour

For the coffee buttercream

  1. One fourth tablespoon of vanilla extract
  2. Eight tablespoons of instant coffee
  3. Four hundred grams of icing sugar
  4. Milk
  5. Two hundred grams of butter at room temperature

Method :

Make the coffee sponge

  1. Pre-heat your oven to 160ºC and
  2. line two 20cm round sandwich tins with greaseproof paper.
  3. Put all of the cake ingredients into a large bowl and beat with electric mixer the ingredients are seamlessly mixed.
  4. Split the mixture between the two prepared tins. Then bake for 35 minutes.
  5. Once the cakes are cooked, remove them from the oven. Leave them to cool in their tins for about 15 minutes before removing them from the tins and moving them out to cool completely.

Make the coffee buttercream

  1. While the cakes are cooling start making the buttercream. Begin by mixing together the instant coffee powder with the boiling water and then set it aside to cool.
  2. In a large bowl beat the butter and vanilla extract and add the icing sugar and beat again until the mixture is well combined.
  3. Gradually add the coffee mixture, 1 tablespoon at a time. After each addition beat the buttercream so that  the coffee is completely combined before more is added

Build the cake

  1. Place the bottom layer of your coffee sponge onto a large dish. Spread coffee buttercream evenly across the sponge.
  2. Add the top layer of sponge. Again spread the coffee buttercream on top.
  3. Enjoy alongside a hot cup of coffee
