Chef Rahul, Head Chef at Roma, explained that the restaurant is committed to serving the best dishes prepared with high-quality ingredients. “We source exotic and top-notch ingredients from the INA market, including Italian tomatoes, lamb chops, truffle oil, high-quality mozzarella for our pizzas, and many more.”

He added that the menu was decided 2 months in advance before the launch. “I visited several restaurants across Delhi, and we decided to create this menu based on what others are not serving. We wanted to stand out.” He further explained that people are serving chaat, but no one is doing Burrata Papri Chaat served with crispy lavash, tangy tamarind chutney, and a hint of pesto for foodies to experience a burst of fruity and creamy flavours in their mouth.

Their Chives and Greens Dumplings are something that you have never tasted before. Accompanied by chilli oil and pickled green chillies, the capsules comprising a subtly sweet and salty filling melt in your mouth. These are like savoury eclairs bursting and oozing in between your teeth.

One dish that Chef Rahul swears by is Rucola Romana, a pizza topped with fresh sauced, grilled vegetables, pecorino romano, and green arugula. The aroma of leaves uplifts your mood the moment you bring a slice close to your mouth. Crispy crust and pulling-apart mozzarella will make you forget all the pizzas you have relished before.

Since the author is a vegetarian, she also tried Peas & Quinoa Tikki - a scrumptious delight that you will love with or without the dips on the side. The tikkis are made of peas stuffed with chèvre cheese, and they are coated with toasted quinoa for a crisp. A tip you should remember is to cut the tikki from the middle so you can joyfully watch the melting cheese oozing out.

All the dal makhani fans should order their Burrata Black Dal that comes garnished with fried potato slivers and burrata cheese. It boasts all the authentic notes of original dal makhani along with a slight crunchiness from the potato slivers and creamy-tangy notes from the cheese.
