When it comes to India, the land of spicy curries and aromatic biryanis has its own different ways of cooking and enjoying lamb-based dishes. Rogan Josh

Rogan Josh is a Kashmiri dish that is not only the heart of Northern India but is now recognised by the whole world. The famous Himalayan dish was introduced to Kashmir by the Mughals, and it has been enjoyed ever since. Rogan Josh is a Persian name that translates to red and hot, and it truly is a rich curry-based hot and red dish.

To make Rogan Josh at home, you can start by taking fresh pieces of lamb meat. Then, marinate the pieces in a mixture of curd, ginger and garlic paste with some salt to taste. Let the meat absorb the pieces by leaving the bowl untouched for a few hours. For the time being, you can prepare the curry by adding your favourite spices to the oil. After the spices are aromatic, add the marinated pieces and let them cook for about an hour. Once the pieces are soft, you can add some water as per your desired consistency and enjoy it with rice or roti.

Galouti Kebab

Galouti Kebab has been the proud traditional dish that emerged from Awadh, which is now Lucknow, the capital of Uttar Pradesh. The word “Galouti” itself means “melt-in-the-mouth”, so you can imagine how savoury the Galouti kebabs must taste. Unlike the regular kebabs, which are either grilled or roasted, these royal kebabs are shallow-fried to give a crispier texture and please people around the globe.

And to celebrate this big win, you can easily make Galouti Kebab at home. All you need to do is chop the lamb and mix it with grated papaya, chana dal, ginger and garlic paste, a squeeze of lemon, and your go-to spices like salt, cloves, cardamom, cloves, nutmeg, etc. Let the mixture set for about fifteen minutes, and then refrigerate it overnight so that the meat absorbs all the spices. Next, take small balls out of the mixture and shape them into circular patties. Shallow fry to make the crunchy and mouth-melting kebabs. You can then enjoy them with a green chutney or pair them with biryani.
