How to Make Perfect Pilaf: A Guide for Beginners

What is Pilaf?

It is extremely popular in Kashmir and Gujarat, perhaps due to the fact that this is where the Persians entered India from. Pilaf was also brought to India by the migrants from Persia.

How to make the (almost) perfect Pilaf

Ingredients 

  • 2 cups basmati rice, dry
  • 1 medium chopped onion
  • 1 tbsp vegetable oil or ghee
  • ½ cup peas
  • ½ cup carrots chopped
  • 1 cup cauliflower, chopped
  • 4 cloves of garlic, chopped
  • 1 tsp whole cumin seeds
  • 4 cloves
  • 1/2 tsp chili powder
  • 1 tsp turmeric powder
  • Salt
  • 10 fried cashew-nuts
  • 15 dried plums
  • 4 cups of water

Instructions

  • Wash the rice and soak it for 45 minutes.
  • Add the ghee or oil to a heavy-bottomed vessel.
  • Add the cumin seeds and let them sputter. After that, add the onions and garlic.
  • Sauté the onions and garlic till soft, then add the vegetables and cook till soft.
  • Add the dry rice and fry for 1-2 minutes.
  • Add the 4 cups of water, toasted cashews, plums, bay leaves, cloves, chili powder, turmeric, and salt to taste, and bring to a boil.
  • Lower the heat, cover, and cook for 15 minutes.
  • Turn off the flame and allow it to rest for 5 minutes.
  • Serve hot.
