How About Some Chinese Dosa For Lunch? Let The Drooling Begin

If you are something of a gourmand who has tried various cuisines from across the world, you would have perhaps noticed that most of them have some kind of signature crepe that consume every other day. In India, too there are various kinds of crepes and pancakes that occupy a place on our dining table every so often. Dosa, being a chief suspect. Dosa or Dosai is an Indian dish that is especially popular in the Southern parts of India. It is made with all sorts of batter made of rice, puffed rice or lentils. The dosas also vary greatly within regions. For instance, the Mysore Masala Dosa comes with a hot stuffing of fried potatoes, tomatoes and spices. It is huge in size, the dosa is rolled up and served with chutney and sambar. Whereas the Pesarattu of Andhra Pradesh, made with a green-mung-based batter, is green in colour and served with chutney. There are many such varieties of dosas that you can find in India. Since dosas are so adaptable, many chefs are also coming up with many fusion dishes around the same. Take this Chinese dosa for instance. No, you will not find something like this in China. But India’s penchant for Chinese, or rather ‘Indo-Chinese’ have found its way in the recipes of other regional favourites too.

India’s proximity to China has led to a lot of cross-cultural influences. Influences that have also found a way to the cuisine of India. Names like ‘Indo-Chinese’, ‘Chindian’ are often used to describe a fusion cuisine, where authentic Chinese food has been given a special ‘desi’ treatment. And this dosa belongs to the same league of dishes too.  

In this dosa, you do not find your typical potato palya, nor is the inside smeared with any south Indian chutney, Yet, there is something so comforting about the dosa that you do not feel a sense of discord. The stir-fried Chinese style filling adds a different level of oomph to this ultra-crispy dosa, making it a delicious lunch option.  

Here’s what you would be required to do. Make sure your dosa batter is nicely fermented before you start making the dosas. Heat the pan, and pour a ladle on the hot pan, spread it. Then add your Chinese-style fillings which are made up of egg noodles, bean sprouts, spring onions, hot sauce etc. You can also smear the dosa with spicy sauce before adding the filling, it will add more flavour for sure. Once the filling is nicely placed in the centre, roll the dosa and flip it over. Serve the dosa hot.
