How A Smart Air Fryer Gives Yesterday's Leftovers A Whole New Identity

There's a familiar little dilemma after a good Indian meal: what do you do with the leftover bowl of dal, those three chapatis or the small portion of sabzi that isn't quite enough for another meal? Reheating everything and eating the same combination again can feel a little uninspiring. But those leftovers can have a rather exciting second act. An Usha air fryer can help turn yesterday's dal into crisp kebabs, cooked rice into golden tikkis and leftover chapatis into crunchy snack bites.

All it takes is a few everyday ingredients, some clever combinations and a little willingness to experiment. Here are six ways to give familiar Indian meals a delicious makeover.

1. Leftover Dal to Crispy Kebab Makeover

A bowl of leftover moong or masoor dal can become the base for a batch of delicious kebabs. Start by draining any excess liquid from the dal, then combine it with boiled and mashed potatoes, finely chopped onions, green chillies, coriander leaves, ginger, roasted cumin powder and garam masala. Add roasted besan or breadcrumbs gradually until the mixture is firm enough to shape. Make small, flat kebabs, brush them lightly with oil and arrange them in the air fryer basket. Air-fry until the outside develops a golden crust, turning halfway through. Serve with mint chutney and a squeeze of lemon. The soft, flavourful centre and crisp exterior make these kebabs a far more exciting way to use yesterday's dal.

2. Yesterday's Chapatis to Nachos-Inspired Twist

Reheating leftover rotis and serving them with another curry? Who said it had to be the only way? Dip each chapati triangle in a little oil, then sprinkle with salt, black pepper, red chilli powder and roasted cumin powder. Arrange the pieces in a single layer in the air fryer basket and cook until crisp, stirring occasionally to avoid scorching. Once they're done, put the chapati chips on a platter and garnish with chopped onions, tomatoes, coriander and boiled sweetcorn. If you want, top with some green and tamarind chutney, followed by shredded cheese or sev. This nachos plate is a desi take on classic chaat.

3. Leftover Rice to Golden Masala Tikkis

Leftover rice is practically waiting for a makeover, and these masala tikkis are a great way to give it one. Combine cooked rice with mashed potatoes, chopped capsicum, onions, coriander, green chillies, red chilli powder and chaat masala. Add a little cornflour or breadcrumbs to bind everything together, then shape the mixture into small, flat patties. Brush both sides with oil and arrange them in a single layer in the air fryer basket. Cook until the tikkis turn crisp and golden. Pair these rice tikkis with tamarind chutney or a spicy tomato dip.

4. Leftover Paneer Bhurji to Mini Toast Bites

Paneer bhurji from the previous evening can easily become the topping for a new snack. Take small bread squares or rounds and spoon a little leftover bhurji over each piece. Add grated cheese if you want a richer topping, then arrange the mini toasts in the air fryer basket. Air-fry until the bread edges turn crisp and the paneer mixture is thoroughly heated. Keep an eye on the cheese so it doesn't brown too quickly. Finish with chopped coriander, chilli flakes and a squeeze of lemon. These mini toasts are ideal for serving when guests drop by unexpectedly or when you want something more interesting than another paneer sandwich.

5. Leftover Dry Sabzi to Stuffed Bread Makeover

Make a tasty filling for crunchy bread parcels using leftover aloo, gobhi or mixed vegetable sabzi. The veggies should be mashed and combined with some grated cheese, chopped coriander and toasted cumin powder. Use a rolling pin to carefully flatten the bread slices. Top with a spoonful of filling. Seal the edges with a little water. Shape them into little bundles or rolls. Gently coat the outside with oil and place them in the air fryer basket. Turn the parcels over halfway through the cooking time, or until the bread is golden and crisp. Serve these crunchy bread parcels with tomato ketchup or coriander chutney.

6. Leftover Mixed Vegetables to Crispy Pakora Bites

When you have small portions of different cooked vegetables in the refrigerator, combine them into one delicious snack. Finely chop leftover carrots, beans, potatoes or cauliflower and mix them with besan, chopped onions, coriander, ajwain, turmeric, red chilli powder and salt. Drop small portions onto a lightly greased air fryer-safe tray. Brush the tops with a little oil and air-fry until the bites are golden and cooked through. Turn them carefully if needed for even browning.
