Holi hai! Check out Sanjeev Kapoor’s diet-friendly recipe for gujiya

Holi is around the corner already. Not only is this festival full of excitement due to the coloured hues of gulal, but for its delicacies. Gujiya, a sweet dumpling, is a traditional dessert popularly made on the occasion of Holi. It’s filled with the goodness of reduced milk called khoya and nuts. However, its richness may not go easy on the stomach of many. But this recipe for gujiya is the baked but healthier version to make your festivities even better.

We got our hands on Masterchef Sanjeev Kapoor’s recipe for Gujiya which is not only diet-friendly but is diabetic safe too.

Here’s a simple but lip-smacking recipe of gujiya for Holi:

Ingredients

1 cup whole wheat flour
1 tbsp ghee + for greasing
1 cup grated khoya
3-4 dates, deseeded and chopped
1 tbsp Sugar free powder
¼ tsp green cardamom powder
¼ cup fresh scraped coconut
4-6 almonds, blanched and slivered
1 tbsp chopped walnuts

Preparation

  1. Take wheat flour in a bowl. Add ghee and mix. Add some water and knead into a semi-soft dough. Set aside for 10-15 minutes.
  2. Heat khoya in a non-stick pan and mix till it melts. Add dates, Sugar free mix and cook till it slightly softens.
  3. Add cardamom powder and mix. Add coconut, mix and cook for 1 minute. Remove from heat, add almonds, walnuts and mix well. Transfer on a plate and cool.
  4. Preheat the oven to 180º C.
  5. Divide the dough into equal medium portions.
  6. Grease the worktop with some ghee and roll each portion to make a semi-thick sheet. Cut each sheet into roundels using a large cookie cutter.
  7. Put some khoya mixture in the center of each roundel, apply some water on the edges of the roundels, fold into a moon shape, press the edges to seal and twist to create a pattern of gujiyas.
  8. Place the gujiyas on a baking tray and brush some ghee on top.
  9. Put the tray into the preheated oven and bake for 12-15 minutes. Remove from the oven and slightly cool.
  10. Store in an airtight jar and serve with cool drinks or hot tea!

Amount of the sugar: 60 grams
Amount of sugar free powder: 10 grams

As an extra but crucial tip, chef Kapoor suggests allowing the dough to rest for 10-15 minutes for better texture of the gujiya. Enjoy this healthy version of gujiya and don’t forget to share it with friends and family on this colorful festive day.
