Healthy And Colourful Carrot Kosambari Salad

Ingredients:

2 Carrot

1/8 cup Split Yellow Lentils

1/4 cup freshly grated Coconut

A handful of Coriander Leaves

A few Curry leaves

1 piece Ginger

1/2 tsp Salt

Half Lemon

Cooking Time: 10 minutes

Servings: 1-2

Method:

Take yellow lentils in a bowl and rinse them using enough water and then soak it for half an hour approximately

Drain the water once the lentils become soft after soaking and keep them aside. Now take carrots, wash and grate them using a grater

Now, chop coriander leaves, curry leaves and ginger finely. Next, take a big bowl and add grated carrot, lentils, coriander, curry leaves, and ginger. Now add salt as per your taste. Mix all the ingredients well and finally squeeze lemon juice and stir it again

Garnish the dish with grated coconut

Finally, healthy and nutritious carrot lentil salad is ready to serve 

Important points to focus on:

It’s better to add salt just before serving the recipe otherwise it will ooze out water 

To make the salad spicy, you can always add finely cut green chillies

Yellow lentils can be replaced with split chickpeas also

You can also put grated raw mango instead of lemon juice in the recipe

You can also add oregano or chilli flakes as per your preferences
