The quintessential rajma-chawal is the go-to comfort food for most Indians. This delicious North Indian delicacy has been a favourite since time immemorial. The kidney beans in an onion- and tomato-based gravy with a hint of spices have absolutely kept us glued to its aroma and taste. We love this so much that sometimes we tend to make a lot of it and then end up shoving a big bowl of leftover rajma into the fridge. But as delicious as it is, rajma cannot be wasted. 1. Breakfast Sandwiches

When it comes to breakfast, your food should be protein-rich and filling. Rajma has a high protein content and it is delicious and filling. Add dry rajma on bread slices and top with tomato slices, cheese, salt and pepper. Grill the sandwiches till they are crispy and then enjoy eating.

2. Cutlets

Mix leftover rajma with boiled potatoes, some mild spices and maida or besan in a mixing bowl. Make round cutlets and fry them till golden and crispy. Serve these cutlets with any sauce on the side.

3. Make A Spread

leftover rajma makes a delicious and creamy spread. Blend leftover rajma to make a smooth and creamy mixture. Add some chopped tomatoes and green chilies to it and blend one more time. Use this sauce as a spread on your sandwiches and flatbreads. You can also pair it with chips, veggie sticks and other snacks.

Parathas are always an ideal option when it comes to filling our tummies with something healthy and delicious. Mash some leftover rajma and stuff your dough with the mixture. Roll them into parathas and roast them with ghee to have a delicious meal. Serve these parathas with green chutney on the side.

5. Rajma Wrap

Make a delicious and wholesome wrap with leftover rajma for a hearty snack. Just take some tortilla breads, spread some mayonnaise and ketchup, add chopped or slices of vegetables, rajma and grill it on a non-stick tawa. Have this wrap for an evening snack or breakfast and voila!
