Hate Bottle Gourd? Give These Delicious Recipes A Try

Gourds of any kind are hated so much. Be it bitter gourd, bottle gourd, or any other gourd, these have seemed to be our least favorite while growing up and even after growing up. I know you can relate to this. We know that bottle gourd has a very bland taste and squishy texture which contributes to its least popularity. But what if I say that you can actually make some amazing and delicious dishes from this not-so-tasty vegetable? 

We have recipes of three delicious recipes made from bottle gourd that you must try. Believe me, these scrumptious dishes will make you think again if you really hate this vegetable or if was it just a misconception. Have a look at the recipes below. 

Lauki Coconut Curry

Ingredients

  • 2 cup chopped bottle gourd
  • ½ cup curd
  • 1 cup coconut milk
  • 3 cups water
  • Handful of curry leaves
  • 1 green chili (chopped)
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • Salt as per taste

Method

  • Peel the bottle gourd and cut it into small sizes.
  • Heat a pan and add bottle gourd pieces.
  • Add salt, curry leaves, green chilies, curd, and water.
  • Mix everything together.
  • Cook it on a low flame until the bottle gourd is completely cooked.
  • Then, add coconut milk and let it cook for less than a minute. (Make sure the coconut milk doesn’t curdle).
  • Take another pan and heat some oil for tadka.
  • Add mustard and cumin seeds and let them splutter.
  • Pour this tempering into the curry and mix.
  • Serve with steamed rice.

Lauki Yakhni

Ingredients

  • 2 bottle gourds (Cut into circles)
  • ½ tsp caraway seeds
  • 2 black cardamoms
  • 1 cinnamon
  • ½ tsp dried ginger powder
  • 1 tsp fennel powder
  • Pinch of hing
  • 1 cup curd
  • 1 tbsp oil
  • 1 cup water
  • Salt as per taste

Method

  • Heat a pan and add oil.
  • Fry Lauki slices until properly cooked. Keep them aside.
  • Take another pan and add oil.
  • Add cinnamon, black cardamoms, and caraway seeds.
  • Saute a little and switch off the heat.
  • Add water slowly and let it boil.
  • Then, add fried Lauki slices, fennel powder, ginger powder, hing, and salt.
  • Add curd. Make sure you keep stirring.
  • When done, serve with rice 

Lauki Kofta

Ingredients

  • 2 bottle gourds (grated) 
  • 2 tomatoes (chopped)
  • 1 onion (chopped)
  • 5 garlic cloves
  • 4 tsp besan
  • ¼ tsp red chili powder
  • 1 ginger (chopped)
  • 1 green chili (chopped)
  • ¼ tsp garam masala
  • ½ tsp turmeric powder
  • Salt as per taste
  • 1 tsp coriander powder
  • 1 tsp oil
  • 1 tsp cumin seeds

Method

  • Take the grated bottle gourds and squeeze them. Keep the juice separately.
  • Take a bowl and add the grated bottle gourd. 
  • Add besan, garam masala, red chili powder, green chili, and salt.
  • Make round balls and fry them until golden brown.
  • Meanwhile, take a blender and add tomatoes and onions. 
  • Also add green chili, ginger, and garlic cloves and grind them together. 
  • Add little water if required.
  • Take another pan and add oil.
  • Add cumin seeds followed by masala paste.
  • Mix and add spice powders.
  • Fry until the paste starts leaving oil.
  • Add the extracted water and let it cook.
  • When done, add fried koftas and cook for a few minutes. 
  • Turn off the flame and serve with rotis and naan.
