For the grilled chicken

  1. 4 large chicken breast
  2. 2 lemons (juiced)
  3. 50 ml olive oil
  4. 2 large pod of garlic minced
  5. 1/2 cup plucked and chopped mint leaves
  6. Salt and pepper, to taste

For the grilled veggie salad

  1. 2 zucchini, thickly sliced lengthwise
  2. 1 sweet lime cut into thick roundels
  3. 10 baby red radish sliced
  4. 3 plum tomatoes thick roundels
  5. 2 butter head lettuce or any green lettuce available
  6. 2 Tbsp olive oil
  7. Salt and crushed black pepper to taste


  1. In the refrigerator, marinate the chicken for one to two hours with all the ingredients.
  2. Grill the chicken for three minutes on each side over moderate heat after thoroughly marinating it.
  3. Olive oil, salt, and pepper should be used to dress all vegetables except lettuce. Grill marinated zucchini and orange slices on a hot grill plate.
  4. Place the lettuce that has been picked, the chicken that has been grilled, and the other dressed and grilled vegetables on the platter.
