Grilled Chicken With Tarragon Sauce: Juicy Meat In Creamy Sauce

Here the recipe of a sauce called ‘Tarragon Sauce’ is shared below which could be perfectly served with grilled chicken pieces. The creaminess of the sauce adds moisture to the tender meat making it juicier, and the aroma of Tarragon leaves makes the dish scrumptious. 

Tarragon is a kind of leafy herb which is green in colour. It has a high aroma with a mild liquorice flavour. This leaf is most common in the French cooking technique. It could be added as a suitable substitute for rosemary.

Ingredients:

Grilled Chicken

  • 2 Chicken fillets
  • ½ tsp crushed black pepper
  • 1 tsp Dried oregano
  • Salt to taste
  • 2 tbsp Olive Oil 
  • 1 tbsp Worcestershire Sauce
  • 2 tsp Mustard powder 
  • 1 tbsp vinegar
  • 2-3 tbsp Oil 

Tarragon Sauce:

  • 2 tbsp butter
  • 1 Onion Sliced 
  • ½ cup Chicken stock
  • ¾ cup cream
  • Salt to taste 
  • Crushed black pepper to taste
  • 2 tsp Dried tarragon leaves

Method:

Grilled Chicken:

  • Take chicken fillets, poke holes with a fork or meat tenderizer and set aside
  • In a bowl add black pepper, dried oregano, salt, olive oil, Worcestershire sauce, mustard powder and vinegar, mix well
  • Add chicken fillets, mix and marinate for 2 hours
  • Grease grill pan with oil, place marinated chicken fillets and cook/grill on low flame for 8-10 minutes for each side

Tarragon Sauce:

  • In a saucepan, add butter and let it melt, add onion and sauté until translucent
  • Add chicken stock and give it a good mix
  • Put off the flame, add cream and mix well
  • Turn on flame, add salt, black pepper, and dried tarragon leaves and mix well, cook until desired thickness
  • Drizzle tarragon sauce over grilled chicken and serve
