Serves: 6

Ingredients:

  • 7 cups of vegetable or fish broth
  • 4 medium-sized cubed potatoes
  • 1 small finely minced onion
  • 1 chopped carrot
  • 1 lb salmon
  • 1 cup heavy cream or coconut milk 
  • 1/4 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup chopped dill

Method:

  • Bring fish or vegetable broth to a boil in an oversized Dutch Oven or stock pot.
  • Add cubed potatoes and cook for 15 minutes.
  • Stir in chopped carrot, minced onion, and coriander and cook for another 5 minutes.
  • Add salmon, salt, and pepper and continue cooking for 5 more minutes.
  • Pour in heavy cream and simmer the soup for the final 5 minutes.
