What is Lohikeitto?
Let's dive into the world of Lohikeitto - the beloved Scandinavian soup that has won the hearts of many. This hearty soup has three main ingredients: salmon, potatoes, and cream, and it is typically cooked in a fish broth. But don't worry if you don't have fish on hand - a vegetable broth will work just as well.
Origin
While Lohikeitto is often associated with Finland, other Scandinavian countries have their own versions, such as Sweden's Laxsoppa and Norway's Fiskesuppe. No matter the country, the dish is prepared similarly and traditionally cooked in a Dutch Oven.
Consumption
Some claim the soup tastes even better on the second day, but who can wait that long to indulge in this deliciousness? If you have any leftovers, don't worry - cooked Lohikeitto can be stored in the fridge for up to four days and reheated quickly on the stove. And for an extra kick, try using hot smoked salmon for an added depth of flavour.
