Here's How You Can Gajar Matar Khichdi At Home:

Ingredients:

1 cup rice (any variety, like basmati or brown rice)

 ½ cup moong dal

 1 cup carrots, finely chopped

1 cup green peas (fresh or frozen)

 1 small onion, finely chopped

 2-3 cloves of garlic, minced

 1-inch piece of ginger, grated

 1 teaspoon cumin seeds

 1 teaspoon of turmeric powder

 1 teaspoon garam masala (optional)

 ½ teaspoon cumin powder

 ½ teaspoon of coriander powder

 Salt to taste

2 tablespoons ghee or cooking oil

 Fresh cilantro leaves for garnishing

Method:

Rice and lentils should be well-rinsed in cold water until the water remains clear. Drain them after soaking them in water for about 30 minutes.

In a saucepan or pressure cooker, warm the ghee or oil. Stir in the cumin seeds and watch them puff up.

Incorporate grated ginger and chopped garlic. Cook for a minute, or until aromatic.

Cook until the onions have turned translucent.

Add green peas and sliced carrots. Sauté for a few minutes.

Add the soaked lentils and rice. Combine well with the veggies.

Add the garam masala (if using), cumin, coriander, and turmeric powders. Combine rice and lentils with seasonings.

Rice and lentils should be combined with water in a 1:3 ratio (use less water for a thicker consistency). To taste, add salt to the dish.

Cover the pot or shut the pressure cooker lid. In a pressure cooker, cook on low heat for approximately 2 whistles, or until the rice and lentils are done. If using a pot, simmer the khichdi, covered, on low heat until the rice and lentils are tender.

When the dish is done, wait for the pressure to naturally dissipate before opening the cooker or pot.

Gajar Matar Khichdi should be served hot and with fresh cilantro leaves on top.
