Chefs Jerson Fernandes & Penpa Tsering Share Breakfast Recipes

One of the best ways to impress your dad on Father’s Day is to cook for him. Show him how much you love him by cooking lip-smacking sweet delights for breakfast. Not only will he recognise your effort, but you will be able to bond with him over food that you both cherish.

To make your search a little easier, Chef Jerson Fernandes, Director of Culinary at Novotel Mumbai, and Chef Penpa Tsering, Chef de Cuisin at Sampan, Novotel Mumbai, shared three recipes of sugary decadents that you can make for breakfast. By following easy cooking directions, you will be able to surprise your father with delights like pancakes, brioche, and brownie. 

Walnut Chocolate BrownieIngredients For Walnut Chocolate Brownie

  • 300 grams castor sugar
  • 250 gram unsalted butter
  • 140 grams melted chocolate
  • 220 grams chopped walnuts
  • 200 grams whole eggs
  • 120 grams refined flour

Method To Prepare Walnut Chocolate Brownie

  • Make a creamy mixture of butter and sugar by beating them together until light and fluffy.
  • Add the whole eggs gradually so that you can combine the ingredients well.
  • Add the melted chocolate to the creamy mixture to make it irresistible. 
  • Combine all the dry ingredients in a separate bowl and start adding it to the wet mixture gradually.
  • Pour the mixture into the lined cake ring mould and bake it at 200°C for 30 mins.
  • Allow to cool, cut into desired shape, microwave it for 2 mins and serve on a hot sizzling plate along with vanilla ice cream and chocolate sauce.

Do not over bake and ensure the oven is preheated before baking. Use a knife tip or toothpick to pierce the centre of the brownie to ensure it's cooked. It has to come out clean and dry.

Breakfast Chocolate BriocheIngredients For Breakfast Chocolate Brioche

  • 500 grams flour
  • 15 grams salt
  • 20 grams gluten
  • 10 grams improver
  • 100 grams sugar
  • 30 grams yeast
  • 150 grams butter
  • 350 grams milk
  • Zest from one orange
  • 80 grams cocoa powder
  • 150 grams chocolate chips
  • 1 whole egg

Method For Preparing Breakfast Chocolate Brioche

  • Combine flour and cocoa powder and add salt, gluten. and improver to the bowl.
  • Mix milk, sugar, egg, and yeast together, let the mixture ferment for 30 minutes.
  • Combine dry and wet mixtures to knead them into a soft dough.
  • Add soft butter and fold in chocolate chips into the dough.
  • Divide the dough into 50gms of small balls and place them in buttered brioche moulds.
  • Bake at 180°C for 30 minutes.
  • Allow to cool and demould.
  • Serve brioche with warm chocolate syrup and choco chips.

You can also use a bit of rum and honey to soak the brioche before consuming it. 

Dates Pancakes

Ingredients For Dates Pancakes

  • 50 grams cashews
  • 1 spring roll sheet
  • 150 grams dates
  • Oil for deep frying
  • 20 grams sesame seeds
  • 50 grams dry coconut

Method For Preparing Dates Pancakes

  • In a grinder, add dates, dry coconut, and cashews. Blend them into a smooth powder.
  • Add this mixture on a spring roll sheet and fold it in half to make the shape of a rectangle. You can also seal the ingredients with another sheet.
  • Press sesame seeds on the top and deep fry the pancakes.
  • Chef Penpa Tsering suggests serving them hot with a scoop of your dad's favourite ice cream on top.
