Eid al-Fitr is almost here as the holy month of Ramadan draws to a close, and Muslims around the world are geared up to celebrate the day with utmost enthusiasm. One of the most important festivals in the Muslim community, Eid al-Fitr and Eid al-Adha is basically the festival of breaking the fast (Roza) and marks the end of 'Ramzan ka Mahina'. The festival falls on the first day of 'Shawwal', the tenth month of the Islamic calendar (Hijri). However, the date of Eid al-Fitr is decided on when the new moon is sighted by local religious authorities; hence the date of Eid varies every year, from place to place. This year, Ramzan Eid in India is expected to begin in the evening of May 2, 2022, and end on the evening of May 3, 2022. Also called Meethi Eid, this festival signifies breaking of the fast (Roza), and that is exactly why food plays a major role in the celebrations.  

As per legends, no Muslim is permitted to starve on this day. In fact, friends and families gather together to indulge in a lavish Eid feast. From biryani, sheermal, kebabs and all other treats are savoured but since this one is Meethi Eid, sweet treats are prime to the celebrations. Sheer Khurma Sips By Chef Ranveer Brar 

Time 

● 10 Minutes 

Serves 

● 2 Glasses 

Ingredients 

● 1/2 litre milk 

● 1 tablespoon ghee 

● 1 tablespoon chopped pistachios 

● 1 tablespoon chopped cashew nuts 

● Hershey' syrup strawberry flavor 

● 2 tablespoons charoli 

● 1/4 cup chopped beetroot (brunoise) 

● 1/2 cup dry vermicelli 

● 15 gms icing sugar 

● 5 gms dried rose petals 

Equipment Needed: 

● 1 Non-Stick Saucepan 

● 1 Spatula 

● 1 Ladle 

● 2 Shot Glasses 

Method: 

● Take a sauce pan and add ghee and dried fruits to roast them on a low flame. 

● Gradually add the beetroot, pouring milk over it to cook well. Ensure that the nuts are blended thoroughly. 

● Add the Hershey' syrup strawberry flavor and cook till the milk almost reaches a boil. 

● Add vermicelli to this mixture and switch off the flame. 

Tips

● For plating purposes, you can roast the vermicelli in ghee. Pour the sheer khurma into shot glasses and place the vermicelli on top in the shape of a nest. Dust icing sugar and sprinkle dried rose petals to beautify the appearance.
