While most vanilla cake recipes have eggs as a primary ingredient for the sponge, this one is an eggless cake as well, as it uses a little bit of milk and vinegar, which give the cake a fluffy effect. To make the batter thick and rich, it is important to add the milk in two portions in order to give the batter a thick and rich consistency. This eggless cake can be baked and prepared in less than an hour and can be your go-to recipe for a quick dessert. 

The only flavouring this recipe uses is vanilla and the cake can be topped with anything from chocolate sauce to to colourful sprinkles. While the batter is simple too, you can play around with it and innovate by adding some chopped nuts or candy to make it more exciting. Here’s the full recipe:

Ingredients 

  • 1 cup of maida
  • 1 teaspoon baking powder
  • 1/4 cup castor sugar
  • 1/4 cup butter
  • 1 cup of milk
  • 1 teaspoon vanilla essence
  • 1 teaspoon vinegar

Method

  • Place the maida in a sieve, add the baking powder, and transfer to a bowl.
  • In another bowl, take castor sugar and add butter to it. Whisk them well.
  • Add maida to the whisked castor sugar. Mix well, and then add a half cup of milk to the bowl and whisk again.
  • To the whisked mix, add vanilla essence and half a cup of milk; whisk again.
  • Put the vinegar in the mix and whisk some more. Then pour the prepared cake batter in a mould and bake at 180 degrees C for 20 minutes.
  • Take out the baked eggless vanilla cake, cut into small slices, and serve.
