Lauki Lajawab or Crispy Fried Lauki

Ingredients

  • 1 large bottle gourd or lauki
  • 2 tsp salt 
  • ½ tsp kasoori methi powder
  • ½ tsp roasted cumin powder
  • 2 tsp chili powder
  • 2 tsp chaat masala
  • 2 tsp coriander powder
  • ½ tsp turmeric
  • ½ tsp garam masala
  • ½ lemon
  • 1½ cups
  • Oil to fry

For Batter

  • ½ cup besan flour
  • 2 tsp salt
  • 1 tsp chili powder
  • ½ tsp kasoori methi powder
  • ½ cup water

Method

  • Start by peeling the lauki and cutting its edge.
  • Slice the lauki into circles and make a hole in them.
  • Put the circled lauki pieces into a parat.
  • Now, add salt, black salt, kasoori methi, roasted cumin powder, chili powder, chaat masala, coriander powder, turmeric, and garam masala.
  • Mix well and add lemon juice.
  • Mix again and let it sit for the next few minutes.
  • Take a bowl and add besan to it.
  • Add chili powder, salt, kasoori methi powder, and water to bring it to the proper consistency.
  • Dip the sliced lauki into the besan batter and then into the bread crumbs. 
  • Fry until crispy and serve with your favourite chutney.
