Don't Like Baingan? Give This Baingan Pollichathu A Try

Baingan also known as brinjal, is one of those vegetables high in nutrients. For those who don’t know, baingan has ample health benefits. From preventing cancer to helping in weight loss, baingan can work like magic if consumed in the right way. Besides, baingan can promote good heart health, controls blood pressure, and is good for diabetics.   

Even though it has so many health benefits and makes for some amazing baingan ka bharta, some people don’t like its taste. But when cooked properly, this vegetable can even beat the taste of chicken. Recently, Chef Kunal Kapur took to Instagram and shared the recipe of the amazing Baingan Pollichathu. Chef Kunal wrote ‘Baingan se pyaar hojaye, ekk dum aesi dish hai ye! Baingan Pollichathu - This recipe is full of spices that are so flavorful, aromatic, and good in taste’.  I agree!! This amazing could work as a perfect starter as well as a perfect main course dish. Before you start wondering about the recipe, we have sorted this out for you. Follow the steps below and have this amazing Baingan Pollichathu at home. 

Ingredients 

  • 1 Baingan 
  • Salt and pepper to taste 
  • Dash of oil  
  • 5 tbsp oil 
  • 1 cup chopped onion 
  • 1 tbsp ginger garlic paste 
  • ½ tsp turmeric powder 
  • 1 tsp chili powder 
  • 1 tbsp coriander powder 
  • 1 tsp cumin powder 
  • Salt to taste 
  • 1 cup chopped tomatoes 
  •  Sprig of curry leaves 
  • 1 banana leaf 

Method 

  • Take the baingan and slice it in circles. 
  • Make Criss cross cuts in the baingan slices and place them in a tray. 
  • Sprinkle salt and pepper. Also, add oil. 
  • Then, roast the baingan slices and roast them on tawa till they attain a beautiful brown colour. 
  • When done, keep them aside. 
  • Heat a pan and add oil. 
  • Add chopped onions and sauté well until they attain a brown colour. 
  • Add ginger garlic paste, turmeric powder, chili powder, coriander powder and cumin powder. 
  • Add salt to taste and mix well. 
  • Add chopped tomatoes and curry leaves. 
  • Take banana leaves and place the tomato mixture on it. 
  • Place the roasted banana slices on it and wrap it with banana leaves. 
  • Roast it for a few minutes. 
  • Unwrap the baingan slices and serve
