There are quite a few steps involved in using a pasta machine. First, you need to flatten your rested dough with your hands and feed it through the rollers. Fold the dough in half and repeat this process a few times to knead and smooth the dough.

Once the dough is smooth, gradually decrease the roller setting by one notch at a time, passing the dough through each setting to thin it out. Continue until you reach your desired thickness. After achieving the right thickness, switch to the cutting attachment of the machine. Feed the sheet of pasta through to create your desired pasta shape, such as fettuccine or tagliatelle.

She simply blends soaked, softened spinach to make a puree and mixes the puree with two cups of flour to make the dough. Once the mound of dough is ready, simply take a scissor and cut elongated pieces of pasta from it; you can also settle for short, angular pieces if you want. Boil the pasta in water and they should be ready to be cooked with a sauce! Chef Bhadouria uses a simple red pasta base made with tomato puree and pasta sauce, but you can easily use a white or pink sauce to make your homemade pasta!
