Mother’s Day gives us all an occasion to feed the hands that have fed us our entire lives. Nothing spells love more than treating your mother to a home-cooked meal after a long day of work. If you’re wondering how to make today special for your mother, here are a few simple and budget-friendly dinner date ideas to make a scrumptious Mother’s Day feast for your mum.

Celebrate a pastalicious Mother’s Day

The easiest and tastiest dish to whip up for any inexperienced cook is a hot and tempting plate of pasta. One can never go wrong by choosing a creamy white sauce pasta like the Garlic Parmesan Pasta. In order to make a simple yet tasty serving of this pasta, you will need the following.

Ingredients:

2 tablespoons of butter

4 cloves of minced garlic

1-2 cups of milk

Uncooked fettuccine pasta

Salt

Pepper

Parmesan cheese

Parsley leaves

Method: This is a one-pot recipe. Start by melting butter in a pan and sauté some garlic over it. Once the garlic turns fragrant, pour in some milk and uncooked fettuccine. Season it with salt and pepper. It’ll take around 20 mins for the pasta to cook completely. Keep stirring and adding more milk to maintain consistency. Once the pasta is cooked, add Parmesan and stir. Add more milk if the mixture becomes thick. When the desired consistency is reached, serve the pasta in a large plate and garnish with fresh parsley leaves.

Pamper your mom with her favourite cocktail

Drinking your favourite cocktail is a fun way to unwind and enjoy. There are a variety of cocktails that can be enjoyed on a Mother’s Day dinner date. A fun cocktail recipe given by restaurateur Zorawar Kalra for a cocktail titled ‘Summer Bliss,’ is as follows :

Ingredients:

Vodka - 60ml

Lime juice - 20ml

Passion fruit syrup - 15ml

Kaffir leaf - 1

Pineapple juice - 45ml

Method: Put all the ingredients in a shaker and fill it up with ice. Shake it well for 15 seconds, pour it into a glass and garnish with a kaffir leaf. Enjoy this perfect thirst-quenching combination of pineapple, passion fruit and kaffir leaf. Make it a mocktail by removing vodka from the recipe.

Make this day a tad sweeter by making Caramel Fudge for your mother

While baking a cake isn’t the easiest experiment for a novice chef, making caramel fudge dessert certainly is. Chef Kunal Kapoor recently shared the following recipe of this super quick and simple dessert on his social media:

Ingredients:

Condensed milk tin - 1 (400gms)

Dark chocolate chips - 2 cups

Vanilla extract - a dash

Roasted almonds - a handful

In a tray, line it with aluminum foil. Pour the contents and let it set in the fridge for 2 hrs. Remove and cut into pieces.
