Creator Of Avocado Toast, Chef Bill Granger Passes Away At 54

Bill Granger – the Melbourne-born chef, also known as the King of Breakfast – left his fans and admirers of his work deeply saddened by his passing away on Christmas Day. Granger, who survived by his wife Natalie Eliott and three children, had an illustrious 30-year long career and was largely self-taught. Credited most famously for creating the avocado toast, his simple but effective approach to food was one of his unique characteristics. An author of 14 cookbooks and owner of 19 restaurants across Greater Tokyo, Sydney, London, Osaka, Seoul and Fukoka, the chef was awarded the ‘Medal of the Order of Australia’ in 2023, for his contributions towards tourism and hospitality.

Granger, whose career kickstarted with the opening of his café – Bills – in 1993, popularised the idea of high-quality coffee, avocado toast, scrambled eggs and ricotta pancakes with honeycomb butter. With an official announcement made on social media, Granger was a chef who made the mark as one of the leading pioneers of modern Australian café culture. With more than 500 recipes in his repertoire, he rose to international fame in 2002 when the New York Times dubbed him as the ‘egg master of Sydney’ as praise for his recipe of light as air scrambled eggs with silken curds.

Here's how you can recreate his famous avocado toast recipe for breakfast at home:

Ingredients

  • 1 avocado, quartered
  • 3-4 slices sourdough bread
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 3-4 sprigs coriander leaves
  • Salt and pepper, to taste

Method

  • Combine the salt, pepper, olive oil and lime juice in a bowl and whisk thoroughly.
  • Place a quarter across a slice of toast and drizzle the dressing on top before garnishing with a sprig of coriander.
  • Add chilli if you like some spice and more pepper before serving.
