Perhaps the most obvious festive indulgences during Christmas are centred around dinner-time when grand promises of roasted meat along with ten different sides of brussels sprouts, mash, gravy and pudding await. Happy chattering around the dinner table followed by multiple helpings of food is how one would imagine celebrating with their loved ones. That being said, why should you shy away from commencing the festive eating right from the time you wake up?
It's only fair that your Christmas mornings start like any other – with pancakes! But this time around, we’re adding a touch of festive magic to them by adding some eggnog just to stay on theme with the celebratory energy and excitement of opening presents on Christmas morning. What’s even better is that your kids can eat them too! Make a big batch of these to dunk in plenty of syrup and a cloud of whipped cream.
Eggnog Pancakes

Ingredients:
- ¾ cup flour
- 1 ripe banana
- 1 teaspoon nutmeg
- 1 egg
- 1/3 cup eggnog
- 1 teaspoon baking powder
- 1 pinch salt
- Butter for greasing
Method:
- In a large mixing bowl, add the ripe banana and mash with a fork. Crack an egg and whisk until combined. In another bowl, combine the flour, baking powder, salt and nutmeg.
- To the egg and banana mixture, add the eggnog and mix well. Combine the dry mixture with the wet eggnog mix and fold gently. Don’t worry if you spot lumps in your batter because the lumpier your pancake batter is, the fluffier the pancakes will be.
- In a gridle, add some butter and wait for it to foam. Ladle the pancake batter and cook on each side for 2-3 minutes, until they have a slightly crispy, golden-brown colour. Flip onto waiting plates and drown in syrup, whipped cream and any fruit of your choice.
