Chocolate And Avocado Frosted Cake: A Delicious Indulgence

Ingredients: 

3 cups all-purpose flour

6 tbsps unsweetened cocoa powder

2 tsps baking powder

2 tsps baking soda

1/2 tsps salt

1/4 cup vegetable oil

1 ripe avocado mashed until very smooth

2 cups water

2 tbsps white vinegar

2 tsps vanilla extract

2 cup granulated sugar

For the frosting:

4 large ripe avocados peeled and pitted

8 oz dark chocolate

4 cups powdered sugar

8 tbsp cocoa powder

Almonds

Method:

1. Preheat the oven to 350°F.

2. Grease and flour 2-8 inches round pans.

3. Beat the avocado with a hand mixer till it becomes a paste, to which you add sugar, vegetable oil, water, vinegar and vanilla. Mix well to ensure there are no lumps.

4. To the above mixture, add sifted flour, cocoa powder, baking powder, baking soda and salt. Fold until combined.

5. Place the batter into greased round pans. Bake for 25-30 minutes.

6. Allow the cake to cool for a few minutes in the pan. Place onto a cooling rack to cool completely before frosting.

7. Scoop avocados and place it in a bowl. Then beat with an electric mixer until smooth. Add melted dark chocolate and mix.

8. Add sifted powdered sugar and cocoa powder to the beaten avocado. Beat for another minute or until creamy and mix.

9. Place the cake on the plate and put frosting on top. Spread the filling neatly and place the second layer on top.

10. Repeat the same procedure and add two more layers. Then, frost the cake all around and on top with a spatula.

11. Top the cake with a sprinkling of chopped pistachios and almonds.

12. Allow the cake to sit for a few hours and then serve.
