Make These 5 Delicious Recipes With Leftover Roti

Leftover food is a common occurrence in Indian household kitchens, and there are numerous reasons why. Several of us who are office workers usually try to prepare a substantial portion of food to make it last for the day so that cooking time can be used for something productive. This, however, results in food being left over for the next day. Rotis are a prime victim of this style of meal preparation.

Making perfect roti isn't everybody’s cup of tea, especially for those who are new to the kitchen. Therefore, the best option remains to make plenty of it so that we won't have to make it over and over again. This often results in a surplus of leftover rotis. Over time, the rotis dry up as all the moisture evaporates, making them less appealing for consumption.

But what you might not be aware of is that they are a good supplement for energy and can be consumed as breakfast. Today we are breaking out seven interesting leftover recipes you can make for your family and yourself.

1) Roti Ka Chiwda
Roti ka chiwda or roti poha, is a great breakfast meal that can be made in under 10 minutes. To make roti ka chiwda, break the rotis into small pieces. In a pan, heat some oil as per the amount of rotis being used, add cumin seeds, chopped chillies, curry leaves, and diced onions, and sauté them until the onions become translucent. Add chilli powder and turmeric and mix well. Throw in the roti pieces and mix well. Cook for 2-3 minutes and your delicious roti ka chiwda is ready to be served hot!

2) Roti Pizza
Roti pizza is another innovative dish that can be made from leftover rotis. Just spread pizza sauce on the roti and top it with onion, capsicum, olives, corn, grilled chicken chunks, paneer, or meat as you prefer. Sprinkle grated cheese on top and either bake it or cook it in a covered pan. You will love it so much that you might try to intentionally keep leftover rotis just to make this pizza!

3) Roti Frankie
Frankies are a most-loved street food in Mumbai, and they can also be made out of leftover rotis. To make street style frankie with roti wrap, apply butter to both sides of the roti and roast it until crispy. Make a potato or chicken filling by heating oil in a pan, adding capsicum and onions to it and sautéing well. Then add mashed boiled potatoes or sauteed boneless chicken, scrambled paneer, and spices of your choice. Mix it well and roll it into cylinders to place it in roti wrap along with capsicum, onion, cheese, and mayonnaise. Enjoy!

4) Roti Tacos
Roti tacos are a crispy delight and you can make them healthy by adding boiled beans and leafy vegetables. To make it, you have to prepare it in 3 parts, veggie stir fry for filling, guacamole as a spread and salsa to add the classic taco zing to it. Prepare veggies to stir fry by adding chilli flakes, chopped garlic, onions, kidney beans, capsicum, corn, and carrots to heated olive oil and sautéing well. For making salsa, mix diced onions, tomatoes, jalapeno, chilli sauce, and lemon juice in a bowl. For making guacamole, mash avocado scraps and mix them with diced onions, salt, lemon juice, and olive oil. After all preparations are done, combine everything one by one into leftover roti and fry by applying oil to a hot pan. It's a good way to make your kids eat healthy veggies.

5) Chapati Sandwich
The chapati sandwich is another flavourful Bombay street food dish. To make it, spread green chutney on a roti and place boiled potato slices along with capsicum, tomatoes, onions, and shredded cheese. Repeat this process layer by layer, fry on a pan using butter and cover it with a lid. Make both sides crispy and serve hot.

6) Roti Quesadillas
Another easy to make, flavourful, leftover roti snack filled with veggies is this roti quesadilla. In a bowl, add boiled sweet corn, chopped capsicum, onions, and grated carrot, along with grated cheese, salt, and pepper. Mix it until well combined. Now, take leftover roti, spread tomato ketchup, toss in the stuffing and top it with grated cheese. Cover it with another roti on top and fry it from both sides on a pan using butter. It'll be ready in under 5 minutes!

7) Roti Cutlets
Street style vegetable cutlets are equally loved as meat cutlets. The good thing is, you can make it with leftover rotis as well. Just grind roti pieces and add carrot, coriander, and chopped onions to it. Add some drops of lemon juice, corn flour, coriander powder, chilli powder, and salt. Mix it until well combined and make small balls. Shallow fry the balls in hot oil or ghee until crispy. It is a healthy variation because, unlike most other cutlets, it's not deep fried.
