Chicken Corn Soup For A Healthy Dinner

Dinner is that meal of the day where you want your stomach to be full, but you do not want it to be unhealthy. The dinner should not be very heavy but it should be nutritious and healthy so that it can keep you full till you have breakfast the next day. Usually, Indian dinners are pretty heavy as we eat a lot of carbohydrates in our meals. Chapati, rice and most of our staples have a lot of carbs and some people try to avoid eating that at night before sleeping due to the lack of physical activity that their body would engage in after the meal.

One of the best options that has become very popular in terms of having a healthy dinner is soup. Be it hot and sour soup, tomato soup or mushroom soup, there are a lot of options that you can experiment with. It is filling and light on the stomach and that makes soup one of the best dinner dishes. Today we have a very healthy chicken corn a recipe for you that you can make if you're trying to have a light and healthy dinner. 

Ingredients 

  • 500 grams boneless chicken 
  • 50 grams corn 
  • 2 tablespoon pepper 
  • 1 diced carrot 
  • Salt as required 
  • 1 tablespoon cornstarch 
  • Two eggs 
  • Butter

Method

  • In the saucepan put the chicken along with salt, pepper and 4 cups of water and boil it for 15 minutes. 
  • When the chicken is boiled, shred it and keep it aside. 
  • In this same boiling water, add your corn and your diced carrots. 
  • Close the lid and let the vegetables boil for around 10 minutes on medium flame. 
  • Open the lid and add cornstarch slurry into the soup. 
  • After cooking for 5 minutes on low flame, add the shredded chicken. 
  • When you see that the soup has reached a consistency that is a little thin than what you desire, break the eggs one by one and put them in it. 
  • Stir continuously while putting your eggs in the soup. 
  • Cook for 5 more minutes and then just before switching off the flame add your butter. 

The soup is ready to serve hot. You can garnish with coriander leaves and enjoy a bowl full of comfort and happiness.
