Inspiration Behind Chef’s Table Menu

In an exclusive chat with Slurrp, Chef Divyansh Arora said that this limited edition menu was designed to reflect a modern, globally-inspired cuisine that blends international flavours with Indian sensibilities. “Our new menu concept, 'Global Bazaar,' celebrates the diversity of global cuisines while catering to local tastes. We've incorporated fresh, seasonal ingredients and creative twists on classic dishes,” he added.

His words will echo in your head when you taste the Spinach and Feta Strudel, a refined dish comprising fresh fig, arugula, feta cheese, balsamic glaze, and charred scallion garlic aioli. The bitterness of spinach is complemented by creamy cheese, figs, and a sour and sweet glaze. Every bite is no short of a flavour bomb in your mouth. The crispy and flaky phyllo pastry is another highlight of this Greek-Indian fusion.

Balance Between Global Flavour And Preferences Of Indian Palates

Any restaurant in India cannot survive unless it caters to the familiar Indian palates. Hence, one would often witness Indianised versions of global dishes. But Chef Divyansh Arora has managed to strike an impeccable balance between global flavours and Indian notes. The best example of this is the Cottage Cheese Gnocchi With Pepper Saffron Sauce. It was served with crispy leeks and tomato ragu.

Once bite into this, you will want the recipe. While the gnocchi was soft as it should be, the sauce stole the show. It was creamy and quite familiar to the Indian palate. When the chef was requested to disclose the secret, he shared, “Indian spices like cumin and coriander were used in the sauce while following the traditional technique to make gnocchi. Hence, this dish is both - feels like home and boasts exotic notes.” He added that dishes like these showcase Chica’s commitment to innovation and flavours.

Their Butter Garlic Prawns with Sourdough Toast is another gem that you cannot overlook if you like seafood. Incorporating Mediterranean textures like crispy phyllo and creamy tzatziki sauce required careful preparation and presentation. Our team worked hard to perfect these dishes.”
