Chef Vinayak Patil Shares His Favorite Prawn Recipes

Being rich in nutrients, prawns are on the top list of every seafood lover. Packed with multiple nutrients, they can fit into all kinds of meals. Be in prawns fry for a light evening snack or spicy prawn curry for lunch, these healthy and delicious delights fulfil all our requirements. Adding prawns to the diet has a lot of benefits and they also help in losing weight. 

This seafood is rich in essential vitamins and minerals that play an important role in building red blood cells and energy production. They are also richer in the level of vitamin E as compared to chicken. Prawns   are a good source of antioxidants that reduces the risk of some chronic diseases like heart attack and cancer. 

But if you are bored with your regular prawn dishes, here are two delectable recipes by Chef Vinayak Patil, Corporate Chef, Butterfly High, Mumbai: 

1. Masala Fry Prawns 


Ingredients: 

  • 5 prawns     
  • 20 ml coconut oil  
  • 1 gm curry leaves  
  • 70 gm Kashmiri red chili paste  
  • 100 ml fish stock  
  • 2 gm coriander powder  
  • 4 gm chilli powder  
  • 1 gm turmeric powder  
  • 2 gm kitchen king  
  • 1 gm jeera powder  
  • Salt to taste 
  • 1 gm fresh coriander leaves  

Method: 

  • Heat the pan. Add oil and keep on a medium flame. 
  • Once the oil is hot, add curry leaves and Kashmiri red chili paste. 
  • Sauté well then add prawns. Stir continuously then add fish stock. 
  • Cook well, and season with coriander powder, chili powder, jeera powder, kitchen king, and turmeric powder. 
  • Sauté for 2 - 3 minutes till all the prawns curl up into a C or O shape. This is an indication that the prawns are cooked. 
  • Garnish with fresh coriander. Masala fry prawns ready to serve.

2. Butter Pepper Garlic Prawns 

Ingredients: 

  • 6 prawns  
  • 15 gm chopped garlic 
  • 5 gm celery  
  • 3 gm black pepper  
  • 10 gm onion 
  • 3 gm ginger 
  • 2 ml fish oil 
  • 2 ml sesame oil 
  • 20 gm butter  
  • 1 gm turmeric  
  • 1 gm spring onion 
  • 5 ml rice wine 
  • Salt to taste 
  • Oil 
  • 5 gm corn flour 
  • 1 egg (Mix well and keep aside for 5 min) 

Method: 

  • Marinate the Prawn with salt and pepper, then put it into a batter made using the ingredients mentioned above and set aside. 
  • Heat the pan and add butter. Then add garlic, celery, onion, and ginger. 
  • Sauté until brown, then add turmeric. Season with salt and pepper. 
  • Stir well then add prawn, sesame oil, fish oil, rice wine, and spring onion. 
  • Tossed well and served on a plate once prawns are cooked. Garnish with spring onion.
