Chef Tarun Sibal Dishes Exotic Plate At HT City Unwind

Can anything be more exhilarating than being a part of live cooking sessions hosted by some of the biggest chefs in India? Yes, HT City Unwind has made it possible for you. The most amazing and much-awaited food and music festival HT City Unwind is here and we are tooooo excited!!

HT City Unwind kickstarted on 7th October and will continue till 9th October i.e., Sunday. This three-day event is being organized at Jawahar Lal Nehru Stadium and is going to be an unforgettable experience for you. This ultimate festival has not just brought the opportunity to enjoy scrumptious food at over 100 food stalls, music, and fun but also to attend some live cooking sessions at the Slurrp Masterchef Cookout zone. The audience has been witnessing some of their beloved celebrity chefs sharing their exclusive recipes followed by their secret tips and tricks.

Fest's first day featured chef Kunal Kapur, chef Nishant Choubey and chef Vaibhav Bhargava who not just cooked on the live stage but entertained the audience as well. The chefs shared their exclusive recipes, tips and tricks, and personal stories. People got a chance to win exciting gift vouchers that too while enjoying. Amazing, isn’t it?

The second day of HT City Unwind is all set to witness the presence of chef Tarun Sibal, Chef Nishant Choubey, and Chef Noah Barnes at Jawahar Lal Nehru Stadium. Chef Tarun Sibal will take over the Slurrp Masterchef Cookout Zone from 2 pm onwards and will share some of his favourite and exclusive recipes. Chef Entrepreneur Tarun Sibal has an experience of 20 years as a product specialist with core competence in the food, and beverage category, across production, operations, formats, food heritage, and food, and liquid culture. “Absolutely delighted to be cooking in my city at one of Delhi's premiere food & music festivals - HT City Unwind. Chef Tarun Sibal is all set to cook some of his favourite recipes, but can you guess which recipe he would have chosen for Slurrp Masterchef Cookout Zone? It is none other than pumpkin ghee podi with chili scallion parota. If you have already started wondering how to make it, we have sorted this out for you!! Ingredients

For Pumpkin Ghee Podi

  • 300 gm baked pumpkin puree 
  • 1 tbsp chopped ginger
  • 1 tbsp chopped green chili 
  • A few curry leaves 
  • A few mustard seeds 
  • Salt to taste
  • 3 tbsp podi masala
  • 2 tbsp freshly grated coconut
  • 5 tbsp ghee
  • 1 tsp blue cheese 
  • 1 tbsp cream cheese

For Parota

  • 100 gm refined flour dough
  • 1 tbsp chili paste
  • 3 tbsp oil
  • 3 tbsp spring onion green
  • Chili oil
  • 1 banana lead
  • A few edible flowers 
  • A few microgreens
  • 1 lemon 

Method

For Pumpkin Podi

  • Roast 300 gm of pumpkin with salt pepper and little oil 
  • Add ghee to the pan 
  • Sauté green chili and ginger
  • Add mustard seeds and curry leaves 
  • Add podi masala 
  • Add a little water to ensure that the masala does not burn 
  • Add pumpkin purée and cook for 5 min 
  • Add salt to taste 
  • And take off the heat 
  • Mix cream cheese and blue cheese and make a spread 

For Parota

  • Knead the refined flour with water and oil into a semi-soft dough
  • Roll it and spread the spring onion green and chili paste 
  • Roll and make a round ball 
  • Let it rest for 10 min 
  • Flatten it with your hands and cook on medium heat.   
  • Take a plate and spread the cheese spread. Add the pumpkin on top. 
  • Add a little ghee and podi. Garnish with grated coconut and microgreens. 
  • Crush the parota and serve with the pumpkin.
