The starter, often accompanied by bread or soup sticks on the side, is healthy and nutritious, especially when made at home using seasonal ingredients. It can even be a wholesome meal after a hectic day when you don’t have the energy to prepare a full-fledged Indian thali.

Thatwani Soup
Speaking about this special recipe, Chef Bidyut Saha said, “Thatwani soup is a resort speciality, cherished especially in winter for its warm and nutritious properties. It is made using Himalayan lentil extract, spices, and herbs, enriched with clarified butter.”
Ingredients
- 100 grams of ghat dal
- 150 grams of black chana dal
- 10 grams of whole garlic
- 10 grams of coriander stems
- 5 grams of coriander seeds
- 3 grams of cumin seeds
- 2 grams of bay leaves
- 2 grams of big cardamoms
- 5 grams of salt
- 10 grams of ghee
Method
- Boil the Ghat Dal and Black Chana Dal along with whole garlic, coriander stem, whole dhania, cumin seeds, bay leaf, cinnamon, and big cardamom.
- Once the lentils are cooked, blend the mixture to a smooth consistency.
- Strain the blended soup to remove any solid residues.
- Adjust seasoning by adding salt and enrich the soup with ghee.
- Serve hot and enjoy the warm, flavorful goodness of this Himalayan speciality.

Bok Choy and Veg Wonton Soup
Ingredients
For Soup
- 20 grams of bok choy
- 10 grams of carrot
- 10 grams of mushroom
- 5 grams of spring onion
- 3 grams of aromatic seasoning
- 2 grams of salt
- 2 ml Maggi seasoning
- 1 ml sesame oil
For Wonton Filling
- Vegetables (finely chopped): As required
- Spring Onion (finely chopped): As required
- Soy Sauce: As required
- Aromat Seasoning: As required
- Salt: As required
- Sesame Oil: As required
For Wonton Dough
- Lotus Flour: As required
- Water: As required
Method
Preparation Steps For the Soup
- Heat stock in a wok.
- Add bok choy, carrot, mushroom, and spring onion to the stock.
- Season with aromatic seasoning, salt, and Maggi seasoning.
- Finish with a drizzle of sesame oil and garnish with fresh coriander and spring onion.
For the Vegetable Wontons
- Combine finely chopped vegetables and spring onion in a bowl.
- Marinate with soy sauce, aromatic seasoning, salt, and sesame oil. Mix well and set aside.
- Prepare dough by mixing lotus flour with water to form a smooth consistency.
- Roll the dough into small 10-gram balls and flatten each using a rolling pin.
- Place the vegetable filling on each flattened dough sheet.
- Fold into a wonton shape and seal the edges properly.
- Boil the wontons for 2 minutes and set aside.
Serving
- Add the boiled wontons to the prepared soup and serve hot. Enjoy!
