Chana Dal Cauliflower Amti: Flavourful, Spicy Curry

A potful of wonder, Chana Dal Cauliflower Amti brings together chana dal, cauliflower, and potatoes in a spicy gravy. It is a melange of distinct tastes of the three main ingredients, spiced with an assortment of masalas. The masala paste, comprising roasted grated coconut, roasted coriander seeds, roasted cumin seeds, garlic cloves, green chilis, and ginger, adds to the uniqueness of the dish. The addition of red chili powder, turmeric powder, a little bit of garam masala powder, and chopped coriander gives the final touches to a satisfying curry. For best results, soak the chana dal in a bowl of water for at least  3 to 4 hours. The curry can be savoured with either rice or chapati. Here is a recipe for Chana Dal Cauliflower Amti:

Ingredients

2 potatoes 

1 chopped cauliflower 

1 onion

1 tomato

1/2 a coconut

1 bowl of soaked chana dal for 3 to 4 hours 

2 teaspoons of coriander seeds

1 teaspoon cumin seeds

1/2 teaspoon garam masala powder

1/2 a garlic 

Chopped coriander

1 teaspoon of red chilli powder

1 teaspoon turmeric powder 

3 green chilis

1 small ginger piece

Refined oil 

Water

Salt

Method

Grate the coconut and slightly roast it till it becomes slightly brown

Slightly roast the  coriander seeds and the cumin seeds

Peel the garlic cloves; cut the onion into thin slices; chop the tomato; and cut the potatoes into medium-sized pieces 

Then grind in a mixie the roasted grated coconut, roasted coriander seeds, roasted cumin seeds, garlic cloves, green chilis, and ginger to make a paste 

In a pan, heat four tablespoons of oil, add the sliced onions and fry, on low to medium flame, till it turns slightly golden brown 

Add the chopped tomato and mix well till the tomato turns soft, add the red chili powder and the turmeric powder, and salt as per taste preference, mix well

Add the masala paste and fry well till the oil comes up

Add the soaked chana dal and mix well with the masalas for about 4 to 5 minutes 

Add the chopped potatoes and mix well 

Add the chopped cauliflower and mix well 

Add chopped coriander leaves and mix well

Add two cups of water and mix, bring the curry to boil on high flame 

Once the curry starts boiling, put the flame to low, cover the pan and let it cook for 25 minutes.

Add half a teaspoon of garam masala powder, and on low flame, and let it cook for 7 minutes

Serve the Chana Dal Cauliflower Curry with steaming hot rice.
