On April 14 and April 15, the energy turns joyfully food-centric as Poila Baisakh, Vishu, and Bohag Bihu and more mark the Solar New Year with deeply rooted culinary traditions. From Bengali spreads of luchi, aloor dom, fish curries, and mishti doi to Kerala's elaborate Vishu sadya served on banana leaves with rice, curries, and payasam, to Assam's Bohag Bihu feasts filled with pitha, laru, and fresh seasonal produce, all come together in a rich celebration where every dish carries meaning, abundance, and the comforting promise of new beginnings.

The cities also gear up for the festivals and celebrations with restaurants and eateries having special themed menus or limited edition menus, which guests from all corners of the country can savour. As always, Yauatcha presents a limited-edition Poila Baisakh 2026 menu that starts with a stunning dim sum variety. The banana blossom dumpling, ocean pearl dumpling and the golden yellow chicken roll boast a flavour that will linger. Highlights include steamed Indian seabass with lemongrass sauce, crispy tofu with roasted chilli, and steamed gondhoraj chicken. The toban chilli fried rice binds the dish together with its rich, flavourful intensity. Sunshine Delight, a baked mango cheesecake placed over Biscoff crumble with passion fruit glaze ends the meal on a sweet note, while the beverage menu enhances the experience with cocktails such as Smoked Mango Spritz, Gondhoraj Collins, and The Kolkata Kick.

The dinner, rooted in Bengali household traditions and influenced by the cultural rhythm of Rabindranath Tagore's tunes, is planned as a journey that unfolds course after course. Jhal muri, veggie chop, and bhetki paturi combine the pandemonium and flavours of Kolkata's streets with the convenience of home kitchens. From there, the thali expands into a substantial main meal filled with festive favourites like luchi and Sunday mutton curry. The meal's desserts include nolen gur bonde payesh and sandesh makha, both of which are sweet and bring good luck for the new year.
