Get The Best Of Both Worlds With A Spicy Sambar Fried Rice

It is that time of the year again, as you wait for bone-chilling winter to give way for pleasant spring. The transition is taking its own sweet time this year, and we have no choice but to wrap ourselves in thick comforters and wait for this misery to end. No seriously, the bouts of coughing and sneezing are not only troublesome but also stressful. Thankfully, this weather makes us very appreciative of simple, fuss-free meals like khichdi and sambar rice that are all heart and requires almost zero effort. 

A hot and tangy bowl of sambar with vegetables mixed with soft white rice, is a gleeful combination in itself, but what if you could take a cue from it and make something that satiates both your South Indian and Asian cravings. Trust us, it is not a lot of effort; all you need are some basic ingredients and a total of 15 minutes to fix yourself this hearty meal of ‘Spicy Sambar Fried Rice’.

With the goodness of onions, tomatoes and capsicum, you can prepare yourself for all things Desi-Chinese, while the grated coconut, sambar powder, and butter ensure your meal has the right ‘South Indian’ touch you have been craving for.

Once you have your ingredients in place and are done with the pre-prep, there’s nothing much left to do. Just heat the pan, let the butter melt. Add ginger and garlic and sauté. You do not have to wait for it to turn brown, add the veggies followed by sambar powder and grated coconut. Add cooked rice, followed by cashews. Close the pan and let it cook on low-medium heat for 5-8 minutes. Garnish with coriander leaves and serve hot. Doesn’t this sound like a cake walk.

Ingredients

  • Onion – 2 No’s
  • Tomato - 2 No’s
  • Capsicum – 1 No
  • Rice – 3 cup
  • Butter – 4 tbsp
  • Ginger paste – ½ tsp
  • Green chilli – 1 tbsp
  • Cashew / Groundnut– 3 tbsp
  • Grated Coconut – 3 tbsp
  • Sambar Powder – 2.5 tbsp
  • Lemon Juice – 1 tbsp
  • Coriander Leaf – 2 tbsp

Pre-Preparation

  1. Chop the onion, tomato, capsicum into small pieces
  2. Finely chop the green chilly & coriander
  3. Fry the cashew/groundnuts and keep aside

Method

  1. Heat a pan and add butter.
  2. Add ginger paste and saute well.
  3. Then add onion, tomato and capsicum and saute for few minutes.
  4. Add sambar powder and grated coconut, mix well.
  5. Now add the cooked rice and mix thoroughly.
  6. Keep the flame low, add cashews, close the pan and cook for 5 – 8 minutes.
  7. Now add the coriander leaves.
  8. Spicy Sambar Fried Rice is Ready.
