Amritsari Nutri Kulcha: Kulchas With Street Style Soya Masala

Amritsar, the Golden City of Punjab is known for its varieties of street food and cuisines. One could easily find various street stalls serving authentic and delicious recipes ranging from morning breakfasts to evening snacks and flavourful dinner. 

Kulchas are one of the most popular and loved morning breakfast meals easily found on the streets of Amritsar. Served with masaaledar chhole and mint and coriander chutney, this dish makes a soulful combination. The recipe shared here is a bit different and is rich with protein. Ditching the usual pair of chhole and kulche, here is the recipe of nutri kulcha which is a popular dish found on the streets of Amritsar. 

This recipe of nutri masala is full of flavours as the nutri or the soya chunks and soya keema are perfectly cooked in the onion and tomato masala which contains many species including anardana and amchur powder, giving a tangy and chatpata flavour to the soya masala. The colour of the nutri masala is so rich and alluring to make people drool over it. The kulchas are perfectly greased with butter and coriander leaves making it soft in texture. 

To serve the dish in proper street style, the masala is again fried on tawa along with sliced capsicum, onion and carrots. All these ingredients and preparation make it a wholesome and appetising dish.

Ingredients: 

For Boiling Nutri-

  • ½ cup Nutri Nugget
  • ½ cup Nutri Keema
  • 2 ltr Water 
  • 1 tsp Salt
  • 2 Green Chilli, Slit 
  • 2 tbsp Ginger, Roughly Cut

For Nutri Masala- 

  • 1 Bayleaf 
  • 2 Dry Red Chillies 
  • 3 tbsp Coriander Seeds 
  • 1.5 tbsp Cumin 
  • 2 Cinnamon Sticks
  • 2 Black Cardamom
  • ¼ pc Nutmeg 
  • Mace (a small piece)  
  • 4 Green Cardamom 
  • 4 Cloves 
  • 5 Black Pepper 
  • 3 tbsp Anardana
  • 2 tsp Ajwain 
  • 2 tsp Kasoori Methi, Powder
  • 2.5 tbsp Amchur Powder 

For Cooking-

  • 3 tbsp Ghee/Oil 
  • ½ tsp Hing 
  • ½ cup Onion, Chopped 
  • 1 tbsp Ginger Garlic Paste 
  • Water (A dash)
  • 1 tsp Green Chilli, Chopped 
  • ¼ cup Capsicum, Chopped 
  • 1 tsp Turmeric 
  • 1 tsp Chilli Powder  
  • 3 tbsp Nutri Garam Masala 
  • 2 cup Fresh Tomato Puree
  • 1 tsp Black Salt
  • Salt to taste
  • Kasoori Methi (a pinch)
  • 3 cups Water 
  • Coriander, Chopped (a handful)

For Masala Kulcha-

  • 2 tbsp Butter
  • 8 Kulchas

For Finishing-

  • 1 tbsp Butter 
  • Onion, Roundels (Handful)
  • Carrot, Matchsticks (Handful)
  • Capsicums, Sliced (Handful)
  • Coriander, Chopped (Handful)
  • Green Chilli, Slit 
  • Green Chilli, Fried 
  • Water (a dash)
  • Ginger, Matchsticks- To garnish
  • 2 Lemon 
  • Mint Chutney- As required

Method:

  • Soak soya granules and soya keema in boiling water along with green chillies and ginger adding a pinch of salt
  • After 5-8 minutes, turn off the flame and squeeze the excess water from the soya granules
  • Roast all the grounded spices on the pan and let it cool down
  • Once the spices cools, grind them all together
  • Add amchur powder in the spices and mix well
  • Now heat oil in an iron wok and melt butter in it, add a pinch of hing and onions
  • Let the onions change its colour to golden brown
  • Now add ginger garlic paste, capsicum and green chillies, saute it adding a dash of water
  • Put the flame to low and add all the spices (turmeric, red chilli powder and nutri masala)
  • Let the spices get cooked
  • Add tomato puree and turn the flame to medium-high
  • Cook the masala until the it release oil from the sides
  • Add salt and black salt, mix well
  • Finally add soya chunks and keema, saute for a minute
  • Add water and let it come to a boil
  • The Nutri Masala is ready

For the Kulchas-

  • Melt butter on a tawa and grease the kulchas with some coriander and the nutri masala

Assembling / Serving-

  • Melt butter on the tawa and add the soya masala along with capsicum, onion, carrot, coriander and chillies, mix together
  • Serve the nutri masala along with butter greased kulchas and onion salad
