6 Authentic Indian Bamboo Shoot Dishes That Are A Must-Try

Bamboo shoots have a unique taste and are renowned for their versatility. It has been used as a culinary staple in various cuisines across the world throughout the centures.

The word Eromba is derived from the words eeru taana lonba in Manipuri which means ‘mixing and stirring watery.’ The bamboo shoots are the key ingredients in the dish. It is typically made with fermented fish, chilli, and various local vegetables and herbs. Eromba is a flavourful and aromatic stew-like dish. The bamboo shoots offer a crunch and absorb the flavour of the spices, thus resulting in a hearty and flavourful curry.  

  • Chunga Pitha  

Hailing from the northeastern state of Assam, Chuga pitha is a savory bamboo shoot dumpling. It is made with grated bamboo shoots which are mixed with rice flour, spices, and herbs, and is made into a dough. The dough is then given the shape of mall dumplings which are steamed. These dumplings are often served with tangy tomato chutney and are a popular snack across Assam.  

  • Eri Polu  

In Assam, people make a hearty stew out of bamboo shoots and Eri silkworms. Bamboo shoots are cooked in a gravy made of tomatoes, onions, garlic, and a blend of spices. The Eri silkworms are then added to the stew, imparting a rich and earthy flavour. Eri Polu is often enjoyed with steamed rice and is rich in nutrients.    

  • Pork With Bamboo Shoots  

Nagaland is quite popular for a dish made of pork and bamboo shoots. Here, the beloved dish marks the rich culinary heritage of the region. To make this tender pork pieces are simmered with fresh bamboo shoots along with ginger, garlic, and an array of aromatic spices. The bamboo shoots add a unique texture and depth to the dish. The dish is widely liked by locals and tourists.  

  • Khangsoi  

Hailing from Manipur, Khangsoi is a traditional dish that features bamboo shoots as one of the main ingredients. The stew is made with a rich and flavourful broth that consists of bamboo shoots, meat mainly chicken or pork, and a variety of spices and seasonal vegetables. This recipe does not contain oil or spices. This stew is very easy to prepare as all the ingredients are put together for boiling and covered and cooked. It is mainly served during chilly winter months.  

  • Bamboo Shoot Curry  

This is a quintessential dish that is popular in several parts of India, especially in the northeastern states and the southern state of Kerala. To prepare the dish, fresh bamboo shoots are cooked in a fragrant curry made with coconut milk, spices, and fresh herbs. The curry is cooked until the bamboo shoots become tender. It is paired with rice or roti for a comforting meal.
