Coriander is one of the most famous herbs in India and is often seen as a garnishing ingredient in a lot of dishes. It is famous for its uniquely refreshing taste and the ability to give a dish that oomph factor because of its strikingly green colour. Coriander is not just a famous herb in India but also in a lot of Southeast Asian countries as well as Middle Eastern countries.

 It is used in both fresh and dry form. As per a study published in the Avicenna Journal of Phytomedicine in 2021, coriander helps in treating various health disorders like digestive problems, diarrhoea, gastrointestinal diseases, and even flatulence. There are various health benefits of including coriander in one's diet. Here are different dishes to ensure that a person consumes an optimum amount of coriander regularly.

* Coriander Parathas

Coriander paratha is an easy-to-make recipe for people who like having different types of flatbreads for their breakfast and lunch. This is a fulfilling paratha that is made from wheat flour. The wheat flour is mixed with water, some finely chopped coriander leaves, and a little bit of salt. A person has to make a fine dough with this paratha and add a little bit of desi ghee for better elasticity and smoothness. Now a person has to roll some circular parathas and cook them in a hot pan until they become crunchy from both sides. This can be served with some vegetable pickle of one's choice.

* Coriander Dal

Coriander dal is another flavourful way of adding coriander to one's diet. Dal is made in most Indian households quite regularly. It is a great source of protein for vegetarians and also consists of fibre and healthy fats. Incorporating a lot of coriander leaves in one's dal is not just going to make it more refreshing but also more nutritious. The good part about summer is that it goes well with all kinds of dal. One can also add it in summer or Gujarati dal. But the only thing that should be taken care of is the fact that coriander has to be added towards the very end and only after being chopped finely.

* Coriander Chaat

Coriander chaat is an out-of-the-box recipe that can be a great evening snack for both children and adults. A great way to utilise the freshness of coriander leaves is to either add it to the cutlets made from potatoes or add it to the fritter batter. Add a lot of yoghurt, tamarind chutney, and green chillies, and some sev to make it more crunchy and delicious. Not only will the coriander leaves enhance the flavour of the chaat but will also make it visually attractive. The green pop of colour incorporated due to the coriander leaves is going to make the chaat stand out. 

* Coriander Juice

Having a healthy and detoxifying juice as the first thing in the morning is the right way to start the day. It helps in flushing out all the unnecessary toxins from the body. As stated above, coriander also helps in getting a person rid of any digestive disorders and promotes regularity of stools. To make coriander juice, one has to simply take some fresh and chopped coriander leaves, lemon juice, cucumber, ginger, and a little bit of salt. Along with this, a person should take 200 mL of water. Add all these ingredients to a food processor and mix everything for at least 3 to 4 minutes. After 3 to 4 minutes, one will see that a bright green colour juice is prepared. Have the juice after putting in some ice cubes.

* Coriander Rice

The problem of leftover rice is very common in most Indian households. There is always some amount of rice left that nobody is ready to eat. In this case seasoning this rice with some spices and a few vegetables can be a great idea to amp up regular boiled rice. Coriander rice is fresh, different, and very light. One simply has to take the boiled rice and sauté it in a pan with a little bit of vegetable oil. Add a little bit of black pepper and red chilli powder to this mixture. Now one can also add some bell peppers and spring onions. The final step is to add a lot of chopped coriander leaves and serve it hot.

* Salad

If one doesn't want to make a lot of effort then making a lazy salad with tomatoes, onions, bell peppers, and broccoli, along with the good garnishing of coriander, can be a great idea. One has to make sure that a lot of fresh coriander leaves are added to this mixture and the seasoning should be kept simple.
