Imagine a life without potatoes! Considered to be every cook’s best friend, our humble starchy buddy goes well with almost everything. Its creamy texture gives the dish a good consistency without changing the taste drastically. From Andes To India- History Of Potato

Potatoes came originally from the Andes mountains in South America. The Incas are believed to have domesticated them over 1,800 years ago. Potatoes travelled to Europe with the Spaniards in the 16th century and soon spread all over the continent. In India, it came with the colonialists somewhere around the fold of the 18th century. Now, you can see them on almost every corner of the street.

Potato Crusted Quiche

Ingredients:

  • 2 pounds potatoes, peeled
  • 1/2 cup Parmesan, grated
  • 1/2 tsp salt
  • 1/4 stick butter, melted
  • 1 egg beaten, for egg wash
  • 2 cups bacon
  • 4 eggs
  • 4 egg yolks
  • 1 1/2 cups cream cheese
  • 1 1/2 cups crème fraîche
  • 1 1/2 cups heavy cream
  • 1 cup Gruyere, grated
  • 1 handful parsley, finely chopped
  • 1 handful tarragon, finely chopped
  • 1 handful chives, finely chopped
  • 1/4 tsp salt
  • 1/2 tsp ground white pepper

Recipe:

 Grate and drain the potatoes and add Parmesan, salt and melted butter to it.

 Take a cake pan and spread the grated mixture on it and along the sides. Freeze the pan for 2-3 hours.

After this, bake the case for 30 minutes and then remove it from the pan. Brush the case with egg wash.

Now, fry the bacon in a pan and let it cool. Mix eggs, beat cream cheese, crème Fraiche and heavy cream with the bacon. Later, add Gruyere, herbs, salt and pepper.

 Fill the potato case with the mixture and bake for 25 minutes. Your dish is ready!

2. Domino Dauphinoise

Ingredients: 

  • 1 tbsp butter, softened
  • 2 pounds potatoes, skin on
  • 4 bay leaves, torn in half
  • 1 1/4 cups heavy cream
  • 1 clove garlic, minced
  • 3 thyme sprigs, leaves picked
  • 1 rosemary stalk, leaves picked and chopped
  • Salt and pepper

Recipe:

Slice the potatoes and stack them in piles in an oven dish, like dominoes. Start from the outside and stack them in circles until the dish is full. Put bay leaves in between some slices.

Mix cream, garlic, thyme leaves, rosemary, salt and pepper in a bowl and pour it over the potatoes.

Cook for 1 hour in a pre-heated oven for 1 hour. If they are not crispy enough, you can increase the heat and cook them for another 10-15 minutes.

 3. Mozzarella Cheese & Potato Pie


Ingredients:

  • 1 pound red potatoes
  • 2 cloves garlic, sliced
  • 3 tbsp unsalted butter
  • 1 tbsp milk
  • 1/2 cup Parmesan cheese, grated
  • 1 cup mozzarella cheese, sliced
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and pepper

Recipe:

 Place roughly cut potatoes, sliced garlic and salt in a pan. Add water and bring it to a boil. Now, simmer till the potatoes are tender.

 Now pass the potatoes through a ricer. Make a milk and butter mixture and pour it over the potatoes.

 Season it with salt and pepper and put it in a dish that is buttered well.

 Place Parmesan cheese and mozzarella slices over the potatoes. Sprinkle rosemary, thyme, oregano, salt and pepper. Finally, bake the dish for 30 minutes until it is bubbly and golden.

 4. Apple & Potato Gratin

Ingredients:

3 tbsp unsalted butter

3 large onions, thinly sliced

1 tbsp fresh thyme leaves, plus extra to garnish

3/4 cup white wine

3 large potatoes

2 apples

1 1/4 cups heavy cream

1 cup whole milk

3/4 cup blue cheese

Salt and freshly ground black pepper

Recipe:

 In a skillet, heat some butter. Add onions and salt and cook till it becomes golden brown.

Then add thyme and white wine to the skillet and cook for 5 minutes.

Peel and slice the potatoes and apples. Remove the seeds, if any.

 Now, in a large bowl, mix potatoes, apples and the mixture prepared earlier. Add milk and cream to it.

  Spread the mixture in a baking dish and pour over some more milk and cream. Dot with blue cheese. You can also sprinkle some more thyme and pepper.

   Bake the dish for 55 minutes, until it is golden brown. Then, remove the lid and bake for 20 more minutes.
