Ingredients:

  • 1/2 cup almond milk
  • 1/2 tbsp distilled vinegar
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar
  • 2 tsp orange zest
  • 1/4 cup fresh squeezed orange juice
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups gluten-free all-purpose flour blend
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups cranberries fresh or frozen

Method:

  • Preheat the oven to 350 degrees F. Grease a loaf pan.
  • In a measuring cup, combine the almond milk and vinegar. Let sit for a few minutes.
  • Meanwhile, in a large mixing bowl, add the vegetable oil, granulated sugar, brown sugar, orange zest, orange juice, vanilla, and eggs. Add the almond milk mixture, and whisk together until well combined.
  • In a separate bowl, mix together the flour, baking powder, baking soda, and salt. Pour this into the wet ingredients in the other bowl, and mix until just combined. Fold in the cranberries.
  • Pour into the loaf pan, then bake at 350 degrees F for 45-55 minutes, or until a toothpick pulls out clean from the center. Let cool in the pan for 10 minutes, then flip onto a wire rack to continue cooling. Enjoy!

Notes:

  • If using frozen cranberries, you do not need to thaw them prior to using in this recipe.
  • If you’d like, feel free to add ½ cup of chopped nuts (like walnuts or pecans) to this recipe.

Cranberry White Chocolate Muffins

Ingredients:

  • 2/3 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2/3 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups cranberries fresh or frozen
  • 2/3 cup white chocolate chips

Method:

  • Preheat the oven to 350 degrees F. Grease a 12-count muffin tin.
  • In a large bowl, add the granulated sugar, vegetable oil, milk, eggs, and vanilla. Whisk together until well combined.
  • In another bowl, combine the flour, baking powder, baking soda, and salt. Pour into the other bowl with the wet ingredients, and stir until combined.
  • Fold in the cranberries and white chocolate chips.
  • Pour the batter into the muffin tin until each one is almost (but not completely) full. Bake at 350 degrees for 23 to 27 minutes, or until a light golden brown on 1top and a toothpick pulls out clean from the center.
  • Let cool in the pan for 5 minutes, then remove to a wire rack to continue cooling. Enjoy!

Cranberry Roasted Breakfast Bowl

Ingredients

For the roasted cranberries

  • 2 cups cranberries
  • 2 teaspoons olive oil
  • 1 Tablespoon brown sugar

To assemble breakfast bowl

  • 2 cups vanilla Greek yogurt
  • 2 cups cooked oatmeal
  • ½ cup pecans
  • ¼ teaspoon ground cinnamon

Method:

  • To make the roasted cranberries, preheat oven to 400 degrees F. Toss fresh cranberries with oil and brown sugar. Roast in oven until softened and slightly caramelized, about 15- 20 minutes. Use immediately or refrigerate and reheat in a microwave oven until warm.
  • To assemble the breakfast bowl, divide Greek yogurt, cooked oatmeal and pecans among four cereal bowls. Top each bowl with warm roasted cranberries. Sprinkle with cinnamon.
