Purple Rain

Fill a 2-liter jug with ice and add 150 ml of non-alcoholic gin, followed by 60 ml each of blue curacao syrup and lemon juice.

Stir the mixture, and top with 200 ml of soda or light tonic water, along with 100 ml of grenadine. Pour the mixture into highball glasses that are filled to the brim with ice, with lemon twists for garnish.

Jaljeera Limeade

In a shaker, combine 60 ml of lime juice with a large, syrupy Medjool date and a pinch of salt. Let sit undisturbed for ten minutes, or until the date soaks up the lemon juice.

Muddle the date with half a teaspoon of jaljeera powder. Top the shaker with ice and shake until well combined.

Strain the mixture into a tall glass filled with ice, top with ginger ale, and stir gently to combine.

Garnish with a pinch of jaljeera powder and a twist of lime. Serve immediately.

Peach Shrub Soda

Place two cups of diced peaches in a large jar, along with 2% of the fruit’s weight in sea salt. Shake well to combine. Place a plastic bag over the peach, followed by a heavy object to hold it in place. Seal the jar tightly.

Place the jar in a dark corner of the room for five days, loosening the lid of the jar once a day to "burp" the mixture.

To assemble the drink, add a few dollops of the shrubs to a large bordeaux or tall glass and top with soda or light tonic. Add a few cubes of ice, and garnish with a sprig of rosemary.

Mulled Wine

Pour a whole bottle of red wine or non-alcoholic red wine into a large pot, followed by a cinnamon stick, a few cloves, and two whole pieces of star anise.

Torch half a cup of brandy to vaporize the alcohol; add to the pot.

Follow with a sweetener—three tablespoons of honey, brown sugar, or maple syrup.

Stir the mixture and bring to a simmer; leave on heat for anywhere between one and three hours. If using regular wine, bring the mixture up to 80°C and let it stew for at least an hour.

Serve warm in ceramic mugs, or glassware of choice.

French 0

Add 60 ml of non-alcohol gin to a chilled champagne flute and top with 90 ml of non-alcoholic champagne or sparkling wine. Garnish with a twist of lime. Serve cold.

Chaat Shanty

In a prechilled jug, combine 220 ml of lemonade with 220 ml of non-alcoholic beer, along with half a teaspoon of chaat masala. Stir gently to combine.

Pour the mixture into large, tall, prechilled glasses. Garnish with a slice of lime and a halved chili.

Virgin Rum Punch

In a large jug filled with ice, combine 90 ml of non-alcoholic rum with 60 ml each of orange and pineapple juice. Stir gently.

Follow with 15 ml each of freshly squeezed lime juice and grenadine syrup; mix with a bar spoon until the grenadine has dissolved. Add more grenadine to adjust the sweetness.

To serve, pour over a tall glass filled with ice, with a twist of orange and a maraschino cherry to garnish.

Aguas Frescas

Add one cup of roughly cut, juicy fruits and vegetables, such as strawberry, cucumber, pineapple, honeydew, et al., to a blender.

Cover with one cup of water, a squeeze of lime, and a teaspoon of agave or raw cane sugar. Blitz on high until well blended.

To serve, pour over ice and garnish with a sprig of mint.

Sour Shirley

In a tall glass, combine 30 ml of lime juice with 45 ml of grenadine, stir well to combine, and top with 180 ml of grapefruit tonic water. Top with ice cubes and garnish with a wedge of lime to serve

Gulkand Spritzer

In a cocktail shaker filled with ice, combine 60 ml of rose water with a tablespoon of gulkand, 15 ml of lime juice, and honey to taste. Shake until well combined.

To serve, strain the mixture over a tall glass filled with ice and top with light tonic water. Garnish with rose petals to serve.
