• 2 pound Russet potatoes peeled and chopped inch 1/2 inch cubes
• 6 cup Chicken Broth
• 15 ounce Can diced tomatoes drained
• 8 ounce Cream cheese
• 1 teaspoon Dried Thyme
• 0.25 cup Fresh Chopped Parsley
• 2 cup Shredded Sharp Cheddar Cheese
• Salt and pepper
• Corn starch to thicken the soup, if you like
• Garnishes:extra shredded cheese, bacon bits, chopped scallions
