STEP 1. clean the beef tripe thoroughly and dip it in a bowl of water with some baking soda.

STEP 1. cover and refrigerate it for 2 hours.

STEP 1. rinse with cold water and cover with lemon.

STEP 1. put the beef tripe in a pressure cooker with green onion stalks.

STEP 1. add enough water to the cooker so that it covers the beef tripe completely.

STEP 1.pressure cook it and reduce the flame after one whistle.

STEP 1. cook it for another hour on low flame.

STEP 1.when cooked, drain the beef and chop it into small chunks.

STEP 1. heat some oil in a pot and saute chopped onions in it until they turn translucent.

STEP 1.add garlic and green onions to it and cook for 2 minutes.
