Ingredients for Sopa De Mondongo Recipe

  • 680 gram beef tripe
  • 3 liter Water
  • 1 tablespoon baking soda
  • 1 No.s juice of lemon
  • 2 stalks green onion
  • 2 tablespoon olive oil
  • 1/2 No.s white onion, chopped
  • 2 No.s green onion stalks, finely chopped
  • 2 No.s garlic cloves, finely chopped
  • 2 No.s medium tomatoes, chopped
  • 1.89 liter water or more if necessary
  • 450 gram pork meat, chopped into pieces
  • 3 No.s Colombian sausages, cut into pieces or sliced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon food coloring or all purpose seasoning like Triguisar, Bijol or Sazón Goya or homemade
  • 2 piece chicken bouillons
  • 4 No.s medium russet potatoes, peeled and cut into pieces
  • 453 gram cassava, cut into pieces
  • 226.50 gram papa criolla or creole potatoes, fresh or frozen, cut into pieces
  • 150 gram green peas
  • 1 No.s large carrot, grated or chopped
  • As required Salt and pepper
  • As required Chopped cilantro

Directions: Sopa De Mondongo Recipe

step 1

  • STEP 1. clean the beef tripe thoroughly and dip it in a bowl of water with some baking soda.

step 2

  • STEP 1. cover and refrigerate it for 2 hours.

step 3

  • STEP 1. rinse with cold water and cover with lemon.

step 4

  • STEP 1. put the beef tripe in a pressure cooker with green onion stalks.

step 5

  • STEP 1. add enough water to the cooker so that it covers the beef tripe completely.

step 6

  • STEP 1.pressure cook it and reduce the flame after one whistle.

step 7

  • STEP 1. cook it for another hour on low flame.

step 8

  • STEP 1.when cooked, drain the beef and chop it into small chunks.

step 9

  • STEP 1. heat some oil in a pot and saute chopped onions in it until they turn translucent.

  • STEP 1.add garlic and green onions to it and cook for 2 minutes.

  • STEP 1. now add chopped tomatoes and cook everything for 5 more minutes.

  • STEP 1.pour in 8 glasses of water, mondogo, sausages, pork meat, chicken bouillons, coloring and cumin.

  • STEP 1. cover the pot with a lid and bring it to boil.

step 14

  • STEP 1. reduce the flame to low and cook for approximately 30 minutes.

  • STEP 1. cover the pot with a lid and bring it to boil.

step 18

  • STEP 1.17 - reduce the flame and cook for another 30 minutes so the cassava and potatoes become tender.
