• 2 Large bell peppers, any color seeded and cut lengthwise into thick slices
• 1 Large yellow onion halved lengthwise and cut into thick slices
• 1 pint Cherry tomatoes
• 2 Large garlic cloves, smashed
• 1.75 pound 8 sweet or hot italian sausages or a combination of the two
• 0.25 cup Scant olive oil
• 0.5 tablespoon Dried oregano
• Salt and freshly ground black pepper
