Directions : Pomme Purée Recipe

STEP 1.Put washed potatoes on rock salt then bake them with the oven for 90 minutes with 220℃.

STEP 2.Place skins on upper and purée them like “push” not “pull” in order not to make them too sticky

STEP 3.Put potatoes into a pot

STEP 4.Add 200 g fresh cream, 10 g butter, 2 g sea salt.

STEP 5.Mix well until it boils and make it smooth.

STEP 6.Add truffle oil as you like.
