• 1 Onion, diced
• pinch A pinch of red pepper flakes
• 2 Garlic cloves, minced
• 3 cup 1 jar marinara sauce
• 1 can Fire roasted diced tomatoes, liquid and all
• 2 cup Low sodium chicken stock or broth
• 4 ounce Uncured turkey pepperoni, quartered
• 1 Medium zucchini, diced
• 8 ounce Mushrooms, chopped or sliced
• 1 teaspoon Dried oregano, crushed in hand
• 2 cup Chopped baby spinach
• Optional, for serving:freshly grated parmesan cheese
