455 gram plain flour
60 gram Butter
40 gram baking powder
1 No.s Egg Yolk
250 milliliter Milk
50 milliliter Cachaça
20 milliliter Water
8 gram salt
250 gram cheddar, cubed
250 gram mozzarella cheese, torn into pieces
2 cloves garlic
1 No.s red chilli
To assemble and fry

Directions : Pastel De Queijo Recipe

STEP 1.1 in a stand mixer bowl add flour, egg yolk, butter and baking powder.

STEP 2.2 heat milk, water, cachaca and salt in a pan.

STEP 3.3 pour this milk in the flour bowl and knead the dough.

STEP 4.4 cover the dough using a cling film and let it rest in the refrigerator for an hour.

STEP 5.5 put all the filling ingredients inside the food processor and pulse them together.

STEP 6.6 make small balls(about 10g each) out of the filling mixture and keep it aside by covering it with a cling film.

STEP 7.7 take the dough out and divide it into 4 parts.

STEP 8.8 roll out the dough to be as thin as possible(2-3mm).

STEP 9.9 position the cheese mixture balls over the dough, spacing out to leave some border space around each ball.

STEP 10.10 brush the beaten egg yolks over the pastry between all the balls. Roll out a second piece of dough to the same thickness as the first, then place over the cheese balls to cover till the edges.

STEP 11.11 seal the pastry edges and cut off the excess.

STEP 12.12 preheat a deep fryer at 150 degree f and fill it halfway with oil.

STEP 13.13 deep fry the pastries in for about 2-3 minutes until they turn golden brown.

STEP 14.14 take them out, wipe the extra oil and garnish with chilli and coriander leaves.
