Popular Brazilian street food snack, pastels are delicious little deep-fried pastry parcels. Marcello Tully's pastel recipe features a gooey double cheese filling of cheddar and mozzarella, spiked with a little heat from red chilli.

Ingredients for Pastel De Queijo Recipe

  • 113.75 gram plain flour
  • 15 gram Butter
  • 10 gram baking powder
  • 1/4 No.s Egg Yolk
  • 62.50 milliliter Milk
  • 12.50 milliliter Cachaça
  • 5 milliliter Water
  • 2 gram salt
  • 62.50 gram cheddar, cubed
  • 62.50 gram mozzarella cheese, torn into pieces
  • 1/2 cloves garlic
  • 1/4 No.s red chilli
  • As required To assemble and fry
  • 1/2 No.s beaten egg yolks
  • As required Plain flour
  • As required Vegetable Oil
  • As required A few Red chillies
  • As required Handful of Fresh coriander

Directions: Pastel De Queijo Recipe

  • STEP 1.1 in a stand mixer bowl add flour, egg yolk, butter and baking powder.

  • STEP 2.2 heat milk, water, cachaca and salt in a pan.

step 4

  • STEP 3.3 pour this milk in the flour bowl and knead the dough.

  • STEP 4.4 cover the dough using a cling film and let it rest in the refrigerator for an hour.

  • STEP 5.5 put all the filling ingredients inside the food processor and pulse them together.

  • STEP 6.6 make small balls(about 10g each) out of the filling mixture and keep it aside by covering it with a cling film.

  • STEP 7.7 take the dough out and divide it into 4 parts.

  • STEP 8.8 roll out the dough to be as thin as possible(2-3mm).

  • STEP 9.9 position the cheese mixture balls over the dough, spacing out to leave some border space around each ball.

  • STEP 10.10 brush the beaten egg yolks over the pastry between all the balls. Roll out a second piece of dough to the same thickness as the first, then place over the cheese balls to cover till the edges.

  • STEP 11.11 seal the pastry edges and cut off the excess.

  • STEP 12.12 preheat a deep fryer at 150 degree f and fill it halfway with oil.

  • STEP 13.13 deep fry the pastries in for about 2-3 minutes until they turn golden brown.

step 15

  • STEP 14.14 take them out, wipe the extra oil and garnish with chilli and coriander leaves.
