• 4 Polish smoked sausages sliced or spicy italian sausages
• 1 Onion, finely diced
• 2 teaspoon Cajun seasoning
• 0.5 teaspoon Salt
• 2 Garlic cloves, minced
• 14 ounce Chopped tomatoes in their juice
• 14 ounce Dried pasta rigatoni or penne
• 4 cup Hot chicken stock from a stock cube
• 3 tablespoon Mascarpone cheese or light cream cheese for a slimming version
• 4 tablespoon Grated parmesan cheese plus extra to serve
• 2 tablespoon Fresh basil, chopped
• As required Salt and pepper to season to taste
• 0.5 flakes Ts[ chilli garnish
