• 2 Cloves Garlic, Crushed
• 1 Lime, rind finely grated and juiced
• 1 Small roma tomato, finely chopped
• 0.25 cup Chopped fresh coriander, plus extra to serve
• 1 tablespoon Olive oil
• 2 Red onions, finely sliced
• 0.5 teaspoon Balsamic vinegar
• Fresh chopped green chilli, to serve
