We love a good mai tai but with two types of rum, its nothing wed serve at, say, a brunch. Enter the mai tai spritz, a genius adaptation from martin cate at smugglers cove. Cate takes out one of the rums, and lengthens the drink with a little bubbly. Its tremendously drinkable, and really highlights the lovely flavors of curaao and orgeat. The smugglers cove recipe specifically calls for champagne, but you can use any sparkling wine that suits your fancy. Since theres only one rum here to carry the drink, make sure its a good one Cate uses denizen merchants reserve rum, and we love it with appleton estate reserve rum.
